A collector, based in Toronto, became interested in wine while visiting his father-in-law in Hong Kong over 60 years ago. He also owned a restaurant that had an impressive wine list and was was able to visit many wineries throughout France. He continued collecting after selling the restaurant with most of his bottles purchased upon release from the LCBO. He took meticulous care of his wine, labeling many of the bottles and storing them in a temperature and humidity controlled cellar in his home.
The score for2000 Billecart Salmon Cuvee Nicolas Francois Billecart Millesime Champagne is 94 from Robert Parker and this is the tasting note -The 2000 Brut Cuvee Nicolas Francois Billecart is a big, exuberant wine that explodes from the glass with layers of fruit. French oak has given the wine an additional measure of volume and richness, but without dominating the wine’s overall balance. Pretty notes of spiciness and minerality add finesse on the close. The Cuvee Nicolas Francois Billecart is 60% Pinot Noir (Mareuil-sur-Ay, Ay, Ambonnay, Verzenay, Mailly) and 40% Chardonnay (Cote des Blancs). In 2000 the wine was aged in barrel (20%) and saw batonnage, although it did not undergo malolactic fermentation.
The score for2000 Krug Brut Champagne is 95 from Robert Parker and this is the tasting note -The Krug vintage 2000 Brut smells strikingly redolent of sea breeze, kelp, and piles of oyster and mussel shells, allied to lemon oil and toasted hazelnuts. On the palate, the aforementioned elements serve for compulsive salivation, while a lusciously juicy amalgam of lime, grapefruit and apple tinged with piquancy of their pips buoys the salty wave of mineral matter into a profoundly protracted finish that bursts with brightness and at the same time reveals mouthwateringly savory crab shell reduction and a hitherto largely hidden dark side of smoky Latakia tobacco, dark-roasted coffee, and toasted grains.
