As a Canadian Certified Chef de Cuisine, his appreciation for wine began well before he was legally allowed to purchase it—a passion that only deepened with time. He maintains a small but carefully curated collection, selecting bottles that inspire his cooking and elevate his weekend family dinners. Many of these wines come from the cellar of a trusted wine merchant and retailer, with whom he frequently collaborates on culinary projects and catering events. Recognizing their rarity and value upon acquisition, he ensures they are properly stored in the climate-controlled wine cellar of one of the restaurants he oversees.
The rating for 2007 Chateau Mouton Rothschild Pauillac is 92 points from Robert Parker and the tasting note - Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Mouton-Rothschild offers classic tobacco and cigar box aromas on the nose, very well defined with black fruit unfolding in the glass. Again, like the bottle at the vertical in May last year, there is an element of Pessac-Léognan on the nose, just a hint of warm gravel. The palate is medium-bodied with fine tannin, quite compact with a foursquare finish of blackberry, tobacco and a pinch of white pepper. Sure, it is shorter than most recent vintages, but I can see this aging with style.
