This collector is WSET 3 certified and has always been fascinated by the history of winemaking, viticulture and how wine pairs with different cuisines. He began collecting 20 years ago and stores his wine in professional facilities in both Toronto and Vancouver. Wines were acquired through the LCBO and BC Liquor Stores.
Producer notes - Signed by one of the new big names in viticulture in the famous Côte-de-Nuits, this beautiful expression of 100% pinot noir classified as a village appellation will offer you a beautiful twilight purple color, intense and tending towards mauve reflections. On the nose, this wine exudes gourmet and fruity notes of small red fruits (cherry, strawberry) and small black fruits (blackcurrant). We will note with interest some floral (rose) and vegetal (licorice) aromas. When mature, it will reveal flavors of macerated fruits (prune) but also leather, truffle and sometimes fur or game, depending on the vintage. Powerful and vigorous, the body of this wine brings a pleasant chew, thanks to a balanced and structured structure. A long aging will allow this wine to acquire a beautiful roundness, making it sensual and racy. You will need patience for this wine to reveal its full potential, some say 20, 25 or even 30 years of rest are necessary... Due to its powerful body, you can accompany it with meats with a strong taste. We are thinking, for example, of a rib of beef grilled over a wood fire, a beautiful duck breast and why not a game with hair. Certain river fish are also indicated, in matelote with red wine for example.
