A Toronto-based collector whose passion in wine ignited while dining frequently in the city's restaurants. He then married a woman from France and spent extended periods travelling around the country, tasting wines from all the top regions. All the wines except the magnum of port were bought directly from local importers or the LCBO. Everything was stored from purchase at the Vintage Conservatory in Toronto.
Producer notes - Domaine de l'Enclos was officially launched by Romain and Damien Bouchard in 2018. The brothers grew up making wines with their father Pascal Bouchard. They started out by purchasing the tiny defunct estate, Domaine de la Grande Chaume, and made the wines in the corner of their fathers winery. When Pascal sold the winery the brothers decided to purchase a historic winery in the heart of Chablis, which gave them the opportunity for a fresh start. Today they organically farm 29 hectares of vines, which range in age from 30 to 50 years old. In 2017, they completed the building of a new winery situated beside the original chateau on the property. Although inspired by traditional winemaking, they employ the best modern techniques as well. This Chablis is made from 100% Chardonnay harvested from 15.4 hectares of 30 year old vines. Fresh and lively, it is a wine that can be enjoyed now or for several years.Source from vines planted in the 60s, 80s, and 90s. The La Fourchaume 1er Cru is superb. Rich and ample with tremendous structure, the 2019 possesses terrific depth and textural resonance throughout the finish. Orchard fruit, lemon confit, almond and menthol infuse the 2019 with notable complexity and intensity. Textured, oily and deep with a bit of a savory edge, the 2019 has so much to offer.
