Inspired by friends, he began collecting wine in 1990, focusing on Bordeaux and Tuscan vintages starting with1986 and 1988. To deepen his expertise, he completed formal training, subscribed to trade journals, and built an extensive reference library. He regularly attended private tastings and SAQ Courrier vinicole dinners, culminating in an SAQ trip to Bordeaux where he visited and tasted legendary Premier Grands Crus. He also put an unused wine cellar in his home to work housing his growing collection. The vast majority of this collection was purchased from the SAQ, LCBO Vintages, and a few bottles were sourced in Florida at ABC liquor. All bottles in his collection have been strictly stored in a dark, temperature- and humidity-controlled basement cellar using regularly maintained Transtherm and EuroCave units. To preserve their condition during transport to Iron Gate in Calgary, the bottles were packed in insulated styrofoam boxes to guard against light and shock.

This is the tasting note for 1996 Chateau Lafite Rothschild Pauillac from Robert Parker - with a score of 98 points. The 1996 Lafite-Rothschild was remarkably deep in color considering that it is now 20 years in age. The bouquet is classic Pauillac with pencil shavings and sous-bois infusing the black fruit, masculine and a little aloof, yet focused and very well delineated. The palate is very well balanced with crisp blackberry and boysenberry fruit, spicier than I recollect, a crescendo of flavors so that it seems understated at first but fans out with a sense of confidence towards the finish. I think this still has more to give so cellar it away for another 5-8 years if you can, but otherwise this is an exemplary Lafite-Rothschild that I can envisage getting better and better in bottle, if not quite as enthralling as either Mouton-Rothschild or Chateau Margaux..
